This sauce is based on one that Chef Louise showed me how to make back in Butler’s (NECI props). It is really flavorful, and a great balance of sweet/savory/aromatic/acidic. The base is carrot juice with orange juice, kaffir lime, orange zest, cardamom, coriander, ginger, garlic, and cumin seed. If you simmer these ingredients, reduce, finish with butter and adjust the acidity with a little lime (or lemon) it’s a fantastic and versatile sauce. Love love love it.
