Most stocks like to have some aromatics added. You can use the ‘standard issue’ mire poix blend of 50% onion, 25% carrot, 25% celery, or, as in this case, choose a blend of aromatics that are going to lend supporting depth to the end result. Here I have scallion, garlic, clove, bay, peppercorn, and cardamom.
