This guy cooked beautifully. I started off with the chicken in a 500 degree oven for about 20 minutes. I pulled the chicken out and let it hang out while I roasted the potatoes for about 20 minutes also, at the same temperature (with a nice rosemary infused oil we had). Then I pulled the temp down to 325 and put both the potatoes and chicken back in the heat for another 40-50 minutes (until the chicken read 145 degrees in the thigh).
