Braised Little Onions

This is an awesome way to cook onions. You put them into a hot pan with oil, and caramelize the contact surface. Then, deglaze with sherry vinegar (let it reduce by half) and add a little stock, thyme and seasoning. Cover and let simmer until tender. The sweet, earthy, nutty, tangy, herbal balance is really satisfying.
